Baby Friendly Pancakes

I enjoy anything from bacon and eggs in the morning (who doesn't love bacon?) to that absolutely decadent cupcake in the evening.
Not only do I love eating all this amazing goodness, I enjoy making it too. Because of this undeclared passion of mine, I have decided to share a few things I know about cooking and baking on this here blog.
I have a very young daughter (almost one year of age) who also enjoys her food, which surpirses me a little, shouldn't babies be super picky?! Since we declared Wednesday 'pancake day' I'm going to share with you my recipe for baby friendly pancakes. This recipe is good for most babies aged 6 months + and contains no whole milk (unless you want it to) and no eggs.

So here goes...

Ingredients
1 cup all purpose flour
1 teaspoon sugar
1 teaspoon cinnamon (optional)
2 teaspoons baking powder
120 ml formula (or whole milk if your baby has started that)
1 tablespoon vegetable oil
1 teaspoon vanilla extract (I usually use less than a teaspoon of the bourbon vanilla powder)
Butter

Method
Combine all the dry ingredients and mix them up slightly, you wanna make sure they're all combined.  Add milk, oil, water and vanilla (if you're not using the powder) and mix them well, you can use an electric hand mixer or if you prefer a whisk (work out those arms a little). Be careful not to over mix it, you want all the ingredients combined but still slightly lumpy.
Ready to flip Pancakes
Heat up a skillet and add a lump of butter, when the butter is melted put a spoon full or ladle (depending on how big you want your pancakes) into the pan. When bubbles start to form on the surface it means the pancake is ready to flip over. Cook the bottom until golden brown (or at least until you think it's golden brown) and serve.

Maybe wait until they aren't too hot if you're serving them to your baby :)

Tip: my daughter loves fruit, she can't get enough of it! So what I usually do is add a little fruit to the mixture to make it have the flavor of fruit and she loves it even more. Just mash up a banana or instead of using sugar, grate in an apple.
