Cookies & Cream Cheesecake

This, again, is not really a recipe for a baby, but it can be for older kids. It works great as a dessert or you can make it for a party. Most adults will enjoy it too, who doesn't love a good cheesecake? :)

I came across this recipe a while back, I can't even remember where it came from, but it was the one of the greatest findings in terms of cheesecake. It is so yummy and creamy and those cookies just go so well with it, this is by far my favourite cheesecake recipe.



Ingredients
Crust:
6 tablespoons butter, softened
2 cups cream filled cookies, crushed (I used oreos,but any of your favourite will do)

Filling:
1 envelope unflavoured gelatin
1/4 cup cold water
8 oz. cream cheese
1/2 cup sugar
3/4 cup milk
1 cup whipping cream, whipped

For Topping:
1 1/4 cups cream filled cookies, coarsely chopped

Method
Crust:
Combine the butter with the cookies and press into the bottom of a 9-inch pan. Put into the fridge to let cool while you're doing the filling.

Filling:
Put the gelatin in water, stir it over a low heat until it has completely dissolved. In a medium bowl combine the cream cheese and sugar and mix well with an electric mixer. When it is well blended add the gelatin mixture slowly while mixing. Then add in the milk and continue to mix until it is well blended. Then let the mixture chill until it has thickened but not set. Fold in the cream cheese and pour it over the crust. Top it with the coarsely chopped cookies and chill until firm.

  3. Cheesecake and cookies - what is not to like?! I love mini cheesecakes too, they look great for parties and are too cute to resist!
