Pea & Bacon Soup

Since yesterday was a cold wintry day I thought about having soup. I consulted my awesome boyfriend (he made me say awesome) on this since he would have to have the soup too. I gave him a list of soups I would make and because he is a bacon fanatic he picked pea and bacon soup. There is not much of this to change to make it baby friendly, but I served it with garlic croutons, unless your baby is ok with garlic I would suggest making the baby version of the croutons without garlic or serving it with a slice of bread/toast. The pictures may not look particularly appetizing, but it is absolutely delicious!

Serves 2 adults and 1 baby



Ingredients
2 tbsp olive oil
6-8 rashers of bacon, diced
1 garlic clove
300g peas
300ml vegetable broth

Adult Version
Method
In a pot heat the olive oil and fry the bacon until they are starting to crisp. Save a few for serving and leave the rest in the pot. Add the garlic and let it cook for about 30 seconds while stirring. Then add the peas and the broth. Bring to a boil and let it simmer for about 5 minutes or until peas are tender (if you are using gresh peas it might take longer than 5 minutes). With a hand blender, blend everything until it is smooth. Then serve with the saved bacon bits and croutons (see recipe below) as garnish.


For the croutons...

Ingredients
1 glove of garlic, crushed
2 slices of toast, diced
1 table spoon olive oil
Salt and pepper to taste

Method
Heat a skillet with the olive oil and add the garlic, cook for a few seconds then add the diced toast. Cook until the toast becomes crispy add salt and pepper to taste

Baby Version
Baby Version
You don't have to change much with soup, maybe just the texture by straining it. For the croutons, do it exactly the same but without garlic or just leave the croutons out and serve with toast and butter :)
