Cupcakes for a Family of Three

I wanted to make cupcakes, but not too many. Having 12 is far too many for us as we endup throwing away many of them due to no one eating them for ages. So I got out my mixer and began a recipe that makes 3 cupcakes. One for each of us.




Ingredients
1 egg white
2 tablespoons sugar
2 tablespoons butter, melted


1 teaspoon vanilla
30g flour
1/4 heaping teaspoon baking powder
Pinch of salt
2 tablespoons buttermilk


Method
Preheat the oven to 180 degrees celsius. Beat the egg white and sugar until it is light and fluffy. Then add the melted butter and vanilla and mix well. Put in the flour, baking powder and salt then mix until  smooth. Add the buttermilk and mix one last time. Divide the mixture among 3 cupcake moulds and bake for 12-15 minutes or until a toothpick stuck in the centre comes out clean. If you have leftover frosting from a previous occasion you can decorate your cupcakes with that

I do something similar too, if a recipe makes 12 cupcakes I usually half the recipe because like you 12 are just to many, in my house only 2 of us live here! :) Anyway I popped over to say that I have nominated you for the Liebster award, its just a bit of fun to be honest a bit of link love between blogs.
